AARP Alaska Presents: Fall Harvest Series

As we near the end of summer, it is almost time to bring this season's harvest into the home. You have spent many hours cultivating crops or fishing in Alaska waters, so our goal is to help preserve your food so it can bring you joy through the winter. Join the UAF Cooperative Extension Service and AARP Alaska for a five-part Fall Harvest Series, which will cover how to make natural, long-lasting products for your family, ranging from jerky to jellies. 

The presentations will be given over Zoom every Tuesday in August and feature a different speaker and new topic so that you can join one or all of them. To view all events, click here.

Tuesday, August 2nd, 11 AM to 12 noon, Fall Harvest Series: Jams and Jellies 
Join Leslie Shallcross of the Cooperative Extension Service to learn how to make great use of Alaska berries with our Jam and Jelly Basics class. This presentation will teach you how to make high-quality jams and jellies, their low-sugar variations, and the many essential details that ensure your batches taste amazing every time. Watch here.

Tuesday, August 9th, 11 AM to 12 noon, Fall Harvest Series: Smoking Fish 
 If you're wondering about the proper equipment, smoking procedures, or whether a fish should be salted or brined before it is smoked, join Julie Cascio of the Cooperative Extension Service as she shares how to smoke fish at home. Furthermore, she will discuss precautions that should be taken to prepare safe, high-quality smoked fish and how to can it for future storage. Tuesday, August 16th, 11 AM to 12 noon, Fall Harvest Series: Preserving Herbs 
Whether you grow your herbs or purchase them from local farmers or grocery stores, preserving their flavors for winter meals is fun, creative, and tasty. In this class, from her Juneau kitchen, Sarah Lewis of the Cooperative Extension Service will teach you how to dehydrate herbs, create culinary salts, infuse vinegars, and flavor sugars. Preserving herbs is a great way to ensure this precious harvest never goes to waste! Watch it here

Tuesday, August 23rd, 11 AM to 12 noon, Fall Harvest Series: Pickling and Fermenting Vegetables 
Do you love pickled vegetables, sauerkraut, and kimchi? Prepare to be astonished by how easy it is to make your own. In this class, from her Juneau kitchen, Sarah Lewis of the Cooperative Extension Service will teach the basics of lacto-fermentation and vinegar pickling for tasty homemade snacks and digestive health. Tuesday, August 30th, 11 AM to 12 noon, Fall Harvest Series: Making Jerky 
Join Leslie Shallcross of the Cooperative Extension Service as she demonstrates how to make delicious jerky using a home dehydrator. Leslie will also explain the process extensively and cover considerations for using Alaska game meat. Watch her presentation here.
