The Building Blocks of Indian Cuisine: A Cooking Series

According to the Centers for Disease Control and Prevention (CDC), healthy eating supports muscles, boosts immunity, and strengthens bones.

AARP members and guests are invited to join us for a cooking series: The Building Blocks of Indian Cuisine. Indian cuisine is renowned worldwide for its complex mix of flavors and wonderful fusion of herbs and spices. The classes in this series will provide the building blocks you need to experiment with Indian dishes at home. The recipes will offer meal ideas that take the health and dietary needs of the 50+ community into account, emphasizing lower cholesterol whole and plant-based foods that are high in protein, fiber, vitamins, minerals and healthy fats.

The diversity of spices and lentils fundamental to Indian cuisine result in tasty combinations unlike anything found elsewhere around the world - the exotic flavors found in mouth-watering curries, sauces, snacks and even breads. This webinar will teach you the basics of Indian spices and lentils, what to use when and the health benefits of each. We will make our own garam masala, India's most famous seasoning.

Chutney is a gluten-free, spicy or savory condiment made from fruits, vegetables, and/or herbs originating in India. Besides being a traditional accompaniment to many Indian dishes it makes a great spread or dip. In this session we will make the two most popular Indian chutneys - the tangy tamarind chutney and the cilantro chutney. You will also learn basic ingredients necessary for cooking your Indian meals prepped and ready, like the ginger paste, onion and tomato base that can be used in many of your dishes.

Homemade yogurt or dahi is a must for every Indian meal. It’s a healthy side to pair with your Indian breads, or take the edge of the spicy curry. Paneer, is a fresh curd cheese used in many Indian dishes. You will learn how to make homemade paneer and yogurt in this session. This is a dairy based class, we will talk about alternatives for non dairy yogurt.

Learn all about different traditional Indian flatbreads including Roti and Papad. Roti is a delicious thin Indian bread served with vegetables and curries. Papad is a light dried lentil chip enhanced with spices. Also learn to make raita, the traditional Indian side dish that can complement any spicy dish with its fresh cooling flavor. In this session, we will make this cool yogurt dip to enjoy with our traditional breads.
